Description

As soon as the first sample was poured the sweet smoky aromas filled the room and put a smile on our faces. Just like ‘Indian candy salmon’, one Panellist stunned us all. Further explanations followed suit; a combination of salmon, salt, maple syrup and hours of smoking created this confection-like treat. Let’s try it – peat smoked scallops with a balsamic glaze. A drop of water and the smoke turned more perfumed, how about designing an aftershave – we all certainly endorsed that! On the palate now rich hemp seed oil but at the same time still that alluring sweet smoke of salmon candy.
